PAELLA


When do we eat it?  We usually  eat Paella on Sundays with our family. It is a typical dish from our region, specially from Valencia



Ingredients:

  • ½ chicken

  • ½ rabbit

  • 400 grams of "bomba" rice

  • 1.5 liters of water

  • 200 grams of green beans

  • 2 garlic cloves

  • 1 onion

  • 2 ripe tomatoes

  • 2 grams of sweet paprika

  • 2 grams of ground saffron

  • 1 green pepper

  • 2 sprigs of rosemary

  • Olive oil

  • Salt




How do we cook it? 


  1. Clean the rabbit and chicken, cut them into large pieces and season them. They have a similar size. Next, prepare the vegetables. Wash the pepper, clean it and cut it into cubes. Wash the tomatoes, the garlic cloves and the onion and chop them all very fine. Wash the beans, remove them and chop them. Put the broth in a pot and heat it until it starts to boil.


  1.  Heat 4 tablespoons of oil in a paella pan, add the chicken and rabbit and fry until golden brown on all sides. Add the green beans and onion and cook for 2 more minutes. Then add the pepper and continue cooking for another 2 minutes. Add the garlic, paprika and saffron and stir with a wooden spoon.


  1. Add the tomato and let it cook until the water it releases evaporates. Add the 1,5 liters of water and add the washed rosemary sprigs. At that moment, distribute the rice throughout the paella pan, so that there is a thin layer, and adjust the salt level.


  1. Cook the rice over high heat for the first 10 minutes, then lower the heat. Continue cooking for 8 more minutes. Remove from heat and cover with a kitchen towel. Let it rest for about 5 minutes so that the rice is al dente and serve it hot.
